{"id":3413,"date":"2020-06-15T11:18:21","date_gmt":"2020-06-15T17:18:21","guid":{"rendered":"https:\/\/uvp.mx\/uvpblog\/?p=3413"},"modified":"2023-07-01T10:52:33","modified_gmt":"2023-07-01T16:52:33","slug":"uso-de-alache-con-flor-anoda-cristata-en-la-gastronomia-contemporanea-mexicana","status":"publish","type":"post","link":"https:\/\/uvp.mx\/uvpblog\/uso-de-alache-con-flor-anoda-cristata-en-la-gastronomia-contemporanea-mexicana\/","title":{"rendered":"Uso de Alache con Flor (Anoda Cristata) en la Gastronom\u00eda Contempor\u00e1nea Mexicana"},"content":{"rendered":"<h6 style=\"text-align: right;\"><strong>Coordinaci\u00f3n de Investigaci\u00f3n<\/strong><\/h6>\n<p>Esta es una investigaci\u00f3n realizada por el estudiante\u00a0 Manzanedo Arroyo Miguel \u00c1ngel en donde el objeto de investigaci\u00f3n es el uso de la Anoda Cristata con una generaci\u00f3n de platillos para poder difundir el uso y propiedades; donde se recuperan los usos gastron\u00f3micos que se ten\u00eda en la \u00e9poca prehisp\u00e1nica y actualmente se identifican las caracter\u00edsticas organol\u00e9pticas de esta; estas recetas con creadas para difundir la Anoda Cristata mediante una exposici\u00f3n gastron\u00f3mica de la cocina contempor\u00e1nea mexicana.<\/p>\n<p>El quelite define \u201cuna planta herb\u00e1cea de tallo verde, grueso y ramoso con hojas en forma aovada y flores purpureas\u201d (Padilla, 2003).<\/p>\n<p>El alache o la amapola del campo define \u201cEs una planta arvense y tambi\u00e9n ruderal nativa importante en M\u00e9xico\u201d (Rzedowski, 2001).<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter wp-image-3415\" src=\"https:\/\/uvp.mx\/uvpblog\/wp-content\/uploads\/2020\/06\/purple-flower-regional-2852187_1920-1024x685.jpg\" alt=\"\" width=\"800\" height=\"535\" srcset=\"https:\/\/uvp.mx\/uvpblog\/wp-content\/uploads\/2020\/06\/purple-flower-regional-2852187_1920-1024x685.jpg 1024w, https:\/\/uvp.mx\/uvpblog\/wp-content\/uploads\/2020\/06\/purple-flower-regional-2852187_1920-300x201.jpg 300w, https:\/\/uvp.mx\/uvpblog\/wp-content\/uploads\/2020\/06\/purple-flower-regional-2852187_1920-768x514.jpg 768w, https:\/\/uvp.mx\/uvpblog\/wp-content\/uploads\/2020\/06\/purple-flower-regional-2852187_1920.jpg 1920w\" sizes=\"(max-width: 800px) 100vw, 800px\" \/><\/p>\n<p>Por medio de los diarios de campo y las rubricas de evaluaci\u00f3n, se crean 11 recetas utilizando como principal ingrediente la Anoda Cristata siendo esta utilizada blanqueada, frita, horneada.<\/p>\n<p>La Anoda Cristata es un quelite que fue sustituido por otros alimentos como es el caso de la papa y espinaca, siendo uno de los principales ingredientes consumidos en la \u00e9poca prehisp\u00e1nica; este alimento fue siendo olvidado por lo que en base a sus propiedades organol\u00e9pticas es un ingrediente completo para el consumo y as\u00ed poder difundirlo mediante un recetario y una exposici\u00f3n gastron\u00f3mica.<\/p>\n<p><strong>Referencias<\/strong><\/p>\n<p>Padilla, C.
